Because with the new OS, the libraries, the languages and the developmental environments are also becoming more feature rich and easier to use.
Better Battery Timing: Doze Mode in Marshmallow promised to save battery as the screen went dark but the phone had to be kept stationary for doze to work. In Nougat this condition is no longer necessary, so your phone will not be burning any battery as you walk to work. Also, it's an automatic feature so you have no need to enable it.
Better Looking Notifications: The look and the feel of notifications have also improved drastically. They are wider and enable you to reply directly without needing to open an app.
Better Split Screen Feature: You can use more than one app on one screen so you no longer need to switch apps back and forth. Not all apps are friendly with this feature yet but all the great ones are. 
Better Toggles: You no longer need to use third party toggle widgets. Android’s quick setting menus are the new built-in toggles that facilitate your access to handy things like Wi-Fi, Bluetooth settings.
Better Encryption: Older Android OS has used full disk encryption system, to encrypt out the phone as a single giant unit while now it will be encrypting each file individually, which makes for a better security system.
Better System Update Speed:  The system updates will be running faster in the background with Nougat and the installation time will only be minimal.
Better Settings Menu: The upper right corner now has a setting button that can help you change and control phone settings more easily.
